Four Pork Dinner

Julie is on a rotation that allows her a modicum of free time, so this week she decided to do a little cooking.  Her use of four different forms of pork (Italian Sausage, Andouille, Bacon, and Ground Pork Loin) made me realize for the millionth time that she is the best wife in the universe.  Behold, our dinner:

For dinner we had kale with bacon, spicy pork empanadas, and red beans and rice.  The red beans and rice had bacon, andouille, and Italian sausage - it was VERY tasty.

And apparently the empanadas recipe makes roughly 50 empanadas, so we decided to freeze 33 of them to eat as snacks later.
